Ideas for planning the happiest of holidays!

Does anyone know any recipes for a chicken dinner? maybe something a little different? We eat a lot of blackend chicken, and with pasta.. and with orange juice..
any ideas? and what do we buy for 2-4 people? Is there any place where we’d be able to buy a whole chicken, or is that too much chicken?

And what can we make as sides with it? maybe deviled eggs a bad idea? what else??

Most grocery stores sell rotisserie chickens. Each person will eat 1/4-1/2 a chicken. For four hungry people, I would probably get 2 of them. Make some mashed taters, green bean casserole, and some deviled eggs to complete the meal. Serve with an iceberg lettuce salad, rolls, and iced tea.

Hi need some ideas for three or five course christmas meals for a restaraunt, Got to be able to serve on bulk for large party bookings, Turkey and all the trimmings for the main dinner , need ideas for starters and dessert and vegetarian.

I’m looking for something other than Turkey.

My husband’s parents always do steak & lobster, or abalone or prime rib, or some other un-traditional fare.

What are some ideas for a non traditional Christmas dinner?

We are a young family and not really into "Green bean casserole" or things like that. 🙂

I am tempted to make a pizza shaped like a Christmas tree. 😀 haha

I do want it to seem festive, but not completely traditional.
Ideas please!

For Christmas this year, it’s just going to be my Mom, brother, boyfriend and myself. We’re making a nice dinner and have ham as our main dish, but I was trying to think of other things to have with dinner besides the normal mashed potatoes, green bean casserole, those sorts of things.

What are some interesting things that you and your family make for Christmas dinner? Any recipe links would be helpful, too! :o)

I tried to find my grandma’s recipe for this casserole, because it’s SOOO yummy, but I couldn’t. I DID however find a recipe online that’s almost identical:

(BTW: I like to add a bit of dill when I make it. Green onions are good in this, too!)

CHEESY HASH BROWN CASSEROLE:

2 lbs frozen hashbrowns, the cubed kind

1 can cream of mushroom soup

1 onion chopped (more to tase)

1/2 stick butter softened or melted

dash salt (maybe as much as 1/2 a teaspoon, depends on if the butter is

salted, or how salty the soup is etc.)

8 oz softened cream cheese

8 oz sour cream

8 oz cheddar cheese (plus some for garnishing)

Combine all the soft ingredients (everything but the potatos), using a mixer or whatever. Then, mix the potatos in by hand. put in a two quart caserole dish. Garnish with onion and cheddar cheese, or crumbled potato chips or anything else creative. Bake in the oven at 350 degrees for an hour.

Serves 12

My new husband doesnt want to actually have a christmas dinner. He says he wants a nice dinner though. But he wont tell me what he wants. He says he wants to get a general idea from me, with what I would like. I personally dont give a rats butt what we eat.

So please if you have ideas on a nice dinner.. share them.. before I kill this man.

Roasted pork loin is nice and not the usual Christmas dinner.

Coat the loin with spicy mustard and thyme. Place in a baking dish
lined with aluminum foil, cover with aluminum foil and bake at
400 degrees for 1 hour 30 minutes.
Slice and spread it out in the baking pan….sprinkle with olive oil and more thyme, bake an additional 5 to 10 minutes.

If you like:
Mix 1/2 cup honey mustard with 1/8 cup regular mustard and 1/4 cup mayonnaise to serve with the pork. (honey mustard is too sweet for me so I use this recipe and it’s just right, you can experiment with the ingredients to get the taste that’s good for you)

Serve with mashed potatoes, green beans and rolls.
My family loves this dinner.


HONEY-GLAZED BAKED HAM
Whole or half ham, ready to eat
1/8 c. prepared mustard
3 tbsp. honey
Whole cloves
3/4 c. brown sugar
Preheat oven to 325 degrees. Place 1 tablespoon flour in turkey size (19" x 23 1/2") oven bag for whole ham or in large size (14"x20") oven bag for half ham. Place bag in 12"x8" baking dish. Insert ham in bag, fat side up. Close bat with twist tie. Pierce bag 6 to 8 times on top. Bake 12 minutes per pound. Remove from oven 30 minutes before it is baked. Carefully slit bag down center and to sides to expose ham. Remove skin, if any, and score fat, diamond shaped, 1/4" deep. Brush entire top of ham with mustard. Insert clove in each diamond. Cover generously with brown sugar. Drizzle with honey. Return to moderate oven, 375 degrees, for final half hour. Allow to stand, covered, 15 to 20 minutes before carving.

*****FOR THE LEFTOVER HAM*****

HAM ‘N EGGS BRUNCH BAKE
1/2 c. chopped onion
1 tbsp. butter
1 can (6 3/4 oz.) chunk ham, drained
1 med. tomato, chopped
2 c. Bisquick baking mix
1/2 c. cold water
1 c. shredded Swiss or Cheddar cheese (about 4 oz.)
1/4 c. milk
2 eggs
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. dried dill weed if desired
2 tbsp. snipped chives
Heat oven to 350 degrees. Lightly grease baking pan 13x9x2 inches.
Cook and stir in ham and tomato. Mix baking mix and water until soft dough forms. Beat vigorously 20 strokes. Pat dough in pan, with floured hands, pressing dough 1/2 inch up sides. Spread ham mixture over dough. Sprinkle with cheese.
Beat milk, eggs, salt, pepper and dill weed with hand beater until foamy. Slowly pour over cheese. Sprinkle with chives. Bake uncovered until golden brown, 25 to 30 minutes. 6 to 8 servings.

LAYERED POTATO ‘N HAM BAKE
1 packaged hash brown potatoes
4 c. very hot water
1 tsp. salt
1 can whole kernel corn, drained
1/3 c. chopped green peppers
1/3 c. chopped onion
1 c. cut up fully cooked, smoked ham
1 1/2 c. shredded process American cheese
1 c. milk
1/4 c. butter, melted
1 egg
1/3 c. Bisquick baking mix
1 tbsp. sugar
1/4 tsp. curry powder
Preheat oven to 350 degrees. Cover potatoes with water in 2 1/2 quart bowl. Stir in salt, let stand uncovered 15 minutes. Drain thoroughly. Layer half each of the potatoes, corn, green peppers, onion, ham, and cheese in ungreased square pan, 9"x9"x2"; repeat. Mix milk, butter and egg. Beat in baking mix, sugar, pepper and curry powder until smooth; pour over top. Bake until top is golden brown and center is set, about 50 to 60 minutes. Serves 6.

CHRISTMAS QUICHE
1 can crescent dinner rolls
1 egg, beaten
1 c. evaporated milk
1/4 tsp. salt
1/2 tsp. Worcestershire sauce
1 c. shredded Swiss cheese
3 1/2 oz. French fried onions
1 cup chopped ham
9 slices crisp bacon, crumbled

Preheat oven to 325 degrees. Yield 9 inch pie. Unroll and separate dough into 8 triangles. Place in 9 inch pie pan (or 9 inch quiche pan), pressing pieces together and form crust. Combine egg, milk, salt and Worcestershire sauce. Stir in cheese and ham. Sprinkle half of onions over unbaked crust. Pour egg mixture into crust. Sprinkle with bacon and remaining onions.

Bake at 325 degrees for 25 to 30 minutes. (40 to 45 minutes if using quiche pan.) Cool 5 minutes before serving.

I will be hosting dinner for my family, approximately 25 people, and I want some new ideas. My father is on a NO salt diet, and many of us are watching cholesterol and triglycerides, so healthy is important.

I want something not too fussy, last year we had beef tenderloin, but I personally was not happy with it, by the time I got to eat, only well done pieces left, cold, etc. Any ideas for perfecting the tenderloin idea? Any other suggestions welcome including side dishes. I will have lots of fresh veggies, salad…any light dessert recipes?

We, of course, have some picky eaters. Any ideas to lighten up/ lower sodium on common Christmas recipes are welcome.

Everyone will want cheesy party potatoes, any way to make it healthier and still taste good?

Thoughts about Lasagna for entree?

How do you roast chestnuts, and are they healthy?

I have come up with the idea of a pork loin, salmon, redskin potatoes, cheesy potatoes for the kids, a vegetable medley and a mixed green salad, with fresh veggies and a low fat recipe for baked crab ragoons as an appetizer. Any suggestions for recipes? Dessert that is light yet yummy?

i think lasagna is a great idea, nice and hearty and can be healthy. you can do either an all veg (red/yellow bell peppers, eggplant, fresh basil…etc) or add a ground beef/ground turkey mix for a healthier option than all beef. and you can make the ground beef more healthy by having your butcher ground a lean cut of meat for you (not too much fat or unknown parts). to make it more christmasy, you can make stars on top with green & red bell peppers.

you may consider pasta and pesto sauce. lots of garlic is good for people with cholesterol probs. can aslo make festive with roasted green and red bell peppers

salad dressing: olive oil, balsamic vinegar, fresh ground pepper, and fresh lemon juice.

instead of cheesy potatoes. make them herb and garlic potatoes.

the less processed food you use, the less sodium.

would your family consider fish instead of red meat or turkey? much heathier, easy to prepare.

im having my family over on christmas for dinner.

I’m tired of the same thing every year for Christmas dinner.I want to try something new.

my favorite is always prime rib of beef, roasted potatoes, cesaer salad, sauteed brussel sprouts. and chocolate cheesecake for desert.

I know what I am having for the main course – Belly Pork slow cooked with all the trimmings. But I am not sure whether to have a pudding as we will probably stuff into the kids selection boxes and chocolates. I am quite good at making Pavlova and not sure whether to make one this year.

What will you guys be having for started, dinner and pudding?

Another complementary dessert for pork is banana pudding. Here’s my grandmother’s recipe. When it was available, Granny substituted 1/2 to 1 cup of cream (straight from the cow) for some of the milk. I substitute 1 cup of cream (straight from the dairy case) for 1 cup of milk.

Banana Pudding

2 cups sugar
1/2 tsp. salt
6 eggs, separated
8 bananas
5 Tbsp. flour
4 cups milk
1 Tbsp. vanilla
1 box vanilla wafers

Slice bananas into 1/4 inch thick slices. Take a 9 1/2 X 13 1/2 X 2 baking dish and coat the bottom and sides with wafers then a layer of banana slices, alternating layers until just below the top, then set aside. Combine sugar, flour, salt, stir in milk. Cook over boiling water or in a thick pot over med. heat until it begins to thicken. Stir beaten egg yokes into hot mixture and cook 7 mins. more. Remove from heat and add vanilla then pour over bananas and wafers. Top with a meringue made with the egg whites (see below) and brown in a hot oven, 425. Serve warm or chilled.

Meringue
6 egg whites
1/2 tsp. salt
1 tsp. vanilla
1/2 Tbsp. sugar
1/4 tsp. cream-of-tartar

Egg whites need to warm to room temperature. Place egg whites in a large mixing bowl, add salt and vanilla. Beat on high until they just begin to thicken. Then begin adding the sugar, a little at a time (beating well between additions). Continue beating until stiff peaks are formed. Test by pulling out the beaters and turn over, peaks should not curl over. Spread all over pudding, make sure it touches the edges to prevent shrinking. Take the back of a spoon and pull up points to make attractive.
