I will be hosting dinner for my family, approximately 25 people, and I want some new ideas. My father is on a NO salt diet, and many of us are watching cholesterol and triglycerides, so healthy is important.
I want something not too fussy, last year we had beef tenderloin, but I personally was not happy with it, by the time I got to eat, only well done pieces left, cold, etc. Any ideas for perfecting the tenderloin idea? Any other suggestions welcome including side dishes. I will have lots of fresh veggies, salad…any light dessert recipes?
We, of course, have some picky eaters. Any ideas to lighten up/ lower sodium on common Christmas recipes are welcome.
Everyone will want cheesy party potatoes, any way to make it healthier and still taste good?

I have come up with the idea of a pork loin, salmon, redskin potatoes, cheesy potatoes for the kids, a vegetable medley and a mixed green salad, with fresh veggies and a low fat recipe for baked crab ragoons as an appetizer. Any suggestions for recipes? Dessert that is light yet yummy?
i think lasagna is a great idea, nice and hearty and can be healthy. you can do either an all veg (red/yellow bell peppers, eggplant, fresh basil…etc) or add a ground beef/ground turkey mix for a healthier option than all beef. and you can make the ground beef more healthy by having your butcher ground a lean cut of meat for you (not too much fat or unknown parts). to make it more christmasy, you can make stars on top with green & red bell peppers.
you may consider pasta and pesto sauce. lots of garlic is good for people with cholesterol probs. can aslo make festive with roasted green and red bell peppers
salad dressing: olive oil, balsamic vinegar, fresh ground pepper, and fresh lemon juice.
instead of cheesy potatoes. make them herb and garlic potatoes.
the less processed food you use, the less sodium.
would your family consider fish instead of red meat or turkey? much heathier, easy to prepare.
